At the end of the renovation of the large main building of the Kreissparkasse in Garmisch-Partenkirchen in 2014, things started to get serious for us. We placed the last orders, did a quick latte art training session, cleaned everything up in the chaos and put it away, and then the big day arrived: the opening of the new main branch of the Kreissparkasse and, as a local catering partner, we opened our own "Wildkaffee" café.

Since the whole house was nervous, thank God it wasn't that noticeable - we certainly were. But as the rush began, the tension quickly disappeared. Everything was new, most of the team, the concept and the processes. But as is often the case, necessity is the mother of invention and so everything fell into place relatively quickly.

The interior design concept was designed in consultation with the Kreissparkasse and Martin Paschek (Raumkunst Werdenfels) . On the one hand, it should evoke a light flair of exotic coffee countries, on the other hand, it should present our homeland and still appear neat and modern. When you enter the café, two images immediately catch your eye, which should create a connection to one another. With our favorite picture - our lady from Burundi on the wall and a mystical Alpspitz massif photo behind the bar, the two main themes were captured very well. The portrait of the ladies from Burundi was taken on one of Hardi's coffee trips. On the trip, coffee farmers were portrayed and this picture was what we liked the most and has stayed with us for years. On the one hand, it best reflects the colorful world of the African way of life and on the other hand, the hard work of the coffee farmers. The images are certainly very contrasting, but almost every household can no longer imagine life without coffee, even if the countries seem distant and foreign to us, their food exports are usually more familiar to us in everyday life. And so it happens that we are sitting in front of the window in our favorite café, looking out at the mountains and enjoying a cup of coffee from Ethiopia, and then suddenly everything fits together quite well. The shot of the Alpspitze stretches across the entire length in the background of the bar. The two photographers Martin Kriner and Christian Weiermann are known for their special mountain photos in our region. In collaboration with Martin Paschek, the picture was mounted on canvas and indirectly illuminated.

This creates a special atmosphere in the room and the mood of the picture is best seen in the morning or evening during the colder season when it gets dark early. Not only does the Zugspitze represent our region, but for us 'locals' the Alpspitze represents our home. When you return home from a long coffee trip, the imposing Alpspitze is the first thing you see from a distance and you know you are almost home.

The illuminated background image therefore contributes to a cozy mood and a relaxed atmosphere, which is definitely a must in a café. Not only we, but also our customers felt very comfortable and our café concept was also very well received and to our delight, Wildkaffee continued to develop - it became a meeting place for young and old. Our café became good advertising for the roastery and shows our catering customers how much good coffee is valued, provided it is prepared correctly. The inquiries regarding tours of the roastery and the interest in our work in the roastery also grew and so our new project was born - the show roastery. That's why a change was necessary.

In January 2018, the time had come and we handed over our café - but not to just anyone, of course. It was very important to us that the café continued to be run under our name in our spirit. With the same values ​​and a lot of experience in the coffee sector, we handed it over to our long-time employee Benny Fleischhacker. Benny took over the premises at the turn of the year in January 2018 with his own motivated team.

So in April 2018 we were able to open our show roastery at Bahnhofstrasse 8. Since then, Benny has been running the café with his family and a young, motivated team and, of course, only serves wild coffee. As before, there is coffee in all variations. Whether cold or warm coffee specialties, there is something for every taste. With Benny's coffee experience, there are always different types of coffee to try. The special thing here is that you can choose between the types of coffee. There is a stronger and a milder version of espresso. Coffee drinks that are made with milk, such as cappuccino or latte macchiato, are made either with fresh hay milk from the Schönegger Käsealm or with oat milk from Oatly.

Fresh milk is delivered twice a week by Schönegger from Prem near Steingaden. What is special about this is that the hay milk comes from mountain farmers who let their cows graze on their alpine pastures at different altitudes from early summer to late autumn. This means that the cows are in the fresh air, have lush grass and various herbs available, and by regularly driving them to other pastures, the animals stay active and therefore fit. This not only benefits the animals, but also preserves the diversity of flowers and grasses on the pastures. The longer the meadows ripen, the denser growth and the soil structure are improved. However, this reduces the number of cuts on the cultivated areas to twice a year, but the hay is much richer and therefore much more sustainable. The natural blooming of the flowers ensures a natural and sustainable rhythm of nature and, above all, offers other animals such as bees, bumblebees and other wild animals their usual habitat.

The fresh milk with a fat content of 3.6% is filled into a refillable bucket. This reduces our Tetra Pak waste by a multiple and the controlled work with Milkmate Barista - a so-called milk dispenser - enables a smooth workflow. Since the fat content of the milk serves as a flavor carrier, our customers like the coffee-milk drinks particularly well, as the flavors can develop best there.

In order to extract a proper espresso shot, Benny and his baristas work on a La Mazocco Strada EP. In 2009, the Italian coffee machine manufacturer released this new portafilter line. In close collaboration with baristas and technical experts, the traditional company developed an innovative technology that allows baristas to work with their own customized pressure profiles. This means that espresso extraction and its variety of flavors can be addressed even more individually and these profiles can be saved permanently. By setting the grammage and storing the pressure profile, a more consistent quality result is achieved when making espresso shots. But it's not just portafilter fans who get their money's worth. Our hand-brewed filter options are also becoming increasingly popular. Specialty coffee, different roasts, every coffee delicacy has its own suitable preparation method and is prepared with the utmost care by the barista. So feel free to ask for advice at the checkout or at the coffee shelf.

But it's not just a wide variety of coffee drinks - the rest of the offering is also impressive. There is a large selection of cold drinks and for non-coffee drinkers - hot chocolate, chai latte and various teas. For breakfast there are freshly squeezed juices, muesli and classic croissants as well as freshly made bread variations.

A variety of dishes are prepared freshly every day with fresh ingredients, fine spices and lots of love for lunch. It is worth mentioning that only the best is served on the table.

Local businesses such as the Schönegger Käse Alm deliver the best cheese and hay milk yoghurt, the Christl butcher's shop in Oberau delivers fresh sausage products and the crispy and fresh fruit and vegetables are ordered from the small market hall in Garmisch. The popular bread products come from the Nuss bakery in Farchant. In addition to its coffee and hearty delicacies, the café is also known for its homemade cakes and tarts. You can enjoy all of this either in the dining room, opposite the bar by the window with a view outside, or on the terrace when the weather is dry. That sounds like a wonderful culinary experience.
