MalisGarten Zillerseasons – Gault Millau

The renowned Gault & Millau restaurant guide has a very special title in store for the 5-star superior MalisGarten hotel in Zillertal, which has been awarded twice for its environmental certification: Hotel of the Year in Austria. The Green Spa Hotel is not only the best hotel in the country, but is also pioneering when it comes to consistent and practical sustainability.

Gault & Millau justified the award with the sustainability practiced on a daily basis, the sophisticated and aesthetic architecture and also the excellent cuisine. To be precise, both restaurants have received multiple awards and focus on healthy and sustainable food. The food is sourced locally. Artificial additives are largely avoided out of conviction. Instead, the natural flavors from the restaurant's own herb and vegetable garden are fully appreciated.

MalisGarten – Creation

In June 2020, a hotel with pioneering architecture and philosophy opened in Zell am Ziller in the Tyrolean Zillertal. The Green Spa Hotel MalisGarten is the first sustainably built and managed 5-star superior hotel . This is a statement, because the sustainability claim at MalisGarten is comprehensive and extends from the employees to the entrepreneurial family, from the kitchen to the bar, from the rooms to the SPA. A hotel made entirely of wood, from head to toe ... roof to floor.

The overall architectural concept for MalisGarten comes from the Italian star architect Matteo Thun. The staging of the climate-friendly raw material wood from the facade to the interior is part of the house's sustainability concept. The energy is generated from water, wood and sunlight.

The place where the hotel was built also has a history: the youngest daughter of the host Christina Binder-Egger often did not take the direct route home after school and rested on a piece of land along the way under a fruit tree. This is where the family then built the sustainable hotel with many fruit trees.

MalisGarten - The offer

The hotel is a refuge for anyone who wants to recharge their batteries. Those who are looking for peace and health, and preferably in as green a place as possible. The Herbarium Spa relies on the long-lasting effects of certified natural cosmetics and the phytoessences of local herbs. In addition to targeted exercise options and mental health coaching, cold therapies, radio frequency treatments and microneedling are part of the health and beauty program. While the herbs are used in a classic and traditional way, the MalisGarten Spa also offers a very modern application to recharge your batteries, strengthen the immune system, reduce stress and generally promote health: the cold chamber. At minus 85 °Celsius, body and mind get a refreshing kick. There is also a Finnish sauna, herbal sauna or brine steam bath for relaxing and calming down.

The Balthasar –
the award

The Falstaff Café Guide justifies its choice as follows: The barista at the counter is undoubtedly a coffee expert. The knowledge of how to process coffee beans is impressive . The quality was previously checked in the Balthasar Lab - workshops are also offered here.

We also received 95 out of a possible 100 points : 40 out of 40 points for coffee, 27 out of 30 points for food, 19 out of 20 points for the ambience and 9 out of 10 points for the service. We think that's a top performance and would like to congratulate you again.

Falstaff – Balthasar Coffee Bar

The Balthasar consists of the Balthasar Kaffee Bar and the Balthasar Lab. The Kaffee Bar is located on Praterstrasse in Vienna, the Lab directly behind it. The easiest way to get to the coffee is via the Nestroyplatz subway station. The Balthasar is immediately inviting, with a mixture of clear structures, modern furniture, stylish accessories and an art-historical fresco from days gone by, it has a magnificent atmosphere.

You can watch the baristas preparing a variety of coffee drinks at the counter and when you see the three-group Slayer in your sights, it should be clear to every coffee lover: this is the right place for you when it comes to specialty coffee and a certain style is a must. The Balthasar is simply special and stands out, and that's something you have to achieve in such an impressive city as Vienna.

Balthasar Coffee Bar - Creation

Otto Bayer, founder and owner of Balthasar, took over his parents' business at the age of 23. But in 2007 he sold the business and took a creative break. During this time he devoted himself to the topic of coffee, including barista courses with Goran Huber in Innsbruck. "The topic of coffee never left me alone. And so the plans became more and more concrete over the years and in 2014 the time had come: I was drawn to the city and nothing stood in the way of opening my specialty coffee shop called Balthasar in Vienna," says Otto Bayer.

Another important step was to find a coffee partner who thinks the same way as Otto Bayer. Sustainability, direct contact with coffee farmers and organically grown coffee were and are important to the Balthasar founder. Luckily, he found this partner in Wildkaffee . And now, luckily, the Falstaff Guide has also named it one of the best cafés in Vienna. Congratulations!
