  • About the coffee

José "Pepe" Jijon founded Finca Soledad in 2010 from scratch and as a 100% organic farm. He started with one of the first lots of Typica Mejorado and Sidra varieties in northern Ecuador, Imbabura province. He planted the farm with 25,000 shade trees and the same amount of coffee plants.

The Wave process mainly involves movement. Over time, Pepe discovered that the cherries get separated in the tanks and the top half oxidizes more than the bottom half, which sits in the mosto. He then placed the tank on its side to counteract this separation and rotated it at regular intervals to move the cherries and thus ensure a more even fermentation.
