This exceptional coffee comes from the Uraga District in Ethiopia's Guji Zone, where local smallholder farmers cultivate some of the country's most exciting coffees at altitudes of up to 2,200 meters. The combination of fertile soils, cool highland climate, and slow maturation of the coffee cherries lays the foundation for an impressive diversity of aromas and natural sweetness.
For this lot, the rare Geisha variety was used, known for its floral elegance and extraordinary complexity. After harvesting, the fully ripe coffee cherries are anaerobically fermented for 72 hours before being gently dried as naturals on raised beds. This special processing intensifies the fruit flavors and gives the coffee a juicy, almost nectar-like sweetness without losing clarity.
In the cup, the coffee is intense and multifaceted. Notes of ripe mango, exotic guava, and juicy plum characterize the flavor profile, accompanied by floral undertones and a fine, lively acidity. Prepare your Ethiopia Anaerobic Natural in a pour-over coffee maker:
1. Insert filter paper, then rinse the filter and cup/pot with hot water.
20 g coffee (grind size 640 microns) to 300 ml water (temperature 93 °C)
0:00 minutes: 60 ml bloom
0:40 minutes: 1st pour to 120 ml
1:00 minute: 2nd pour to 180 ml
1:40 minutes: 3rd pour to 240 ml
2:20 minutes: 4th pour to 300 ml
