Colombia Red Bourbon

  • About the coffee

This Red Bourbon grows at an altitude of 1,730 meters on the Finca Las Flores in Huila. Founded in the 1990s, the finca has grown from a farm with 18,000 trees to a large estate with 90,000 trees. In 2006, the Ayure family began growing specialty coffee and participating in the Cup of Excellence competition.
Since then, the family has devoted itself primarily to growing special microlots, such as this Red Bourbon. The cherries are hand-picked, then disinfected and fermented in plastic bags for 12 hours and then in tanks for another 24 hours. After fermentation, the coffee is dried in hermetically sealed stainless steel tanks with dehumidifiers until it reaches a moisture content of 11%.
