There are a number of adjustments you can make to optimize your filter coffee. Bean selection, grind level, brew ratio and much more. This includes choosing the right filter paper. We did a great filter paper test here . Today we're mainly talking about Sibarist's filter papers. They're something special compared to all the others on the market. We'll tell you what makes them different from conventional filter papers in the next sections.
Sibarist filter paper – details about the filters
There are various filter papers from Sibarist , we take a closer look at the Fast Flow filters, because these allow the coffee lover to do some things that you cannot do with conventional filter papers.
The Sibarist filter paper is made from 100% organically grown raw materials in Barcelona. The filter feels a bit like fabric and has very fine pores, which allows you to achieve a very high drainage speed. Usually higher than with filter papers from other manufacturers such as Kinto, Hario, Chemex or CAFEC. The filter papers from Sibarist are made from abaca hemp, cellulose fibers and polylactic acid (bioplastic). And yet the filters are only slightly thicker than those from CAFEC, which in turn are among the thinnest filters available.
Sibarist filter paper – what they do
The main advantage of the high drainage speed is that you can grind your coffee more finely without risking over-extraction. This in turn means that you can tease out completely different flavors from the coffee. Filter coffee brewed with Sibarist filter paper is often sweeter. Sibarist papers also score points with having almost no taste of their own. They are almost tasteless. (Nevertheless, you should also rinse the Sibarist filter papers with hot water before pouring in the ground coffee.)
Sibarist filter paper – World Brewers Cup winner
The ultimate proof of the quality of Sibarist filter papers will be provided by World Brewers Cup Champion Martin Wölfl in Chicago in 2024 at the latest. He won the world championship title there with Sibarist's Fast Flow papers, among other things. But he has already been working with Sibarist filters for many years. "Brewing with Sibarist filter papers has completely changed the way I make filter coffee. There are so many variables you can play with, and you should definitely rethink your grind and brewing time. It's a lot of fun, and I guarantee you'll discover so many new faces of your coffee that you've never tried before. So enjoy the experience."

Sibarist filter paper – espresso filter
Sibarist espresso filters are filters that were developed for preparing espresso and other coffee specialties using a portafilter machine. They improve extraction consistency and puck yield with greater cup clarity, thus producing better drinks. We offer the filters in two versions: High Cellulose and High Membrane.
The High Cellulose is, as the name suggests, an espresso filter made of cellulose that offers a high level of filtration in the espresso shots, with a great influence on the extraction conditions and the puck yield.
High Membrane is a filter made of synthetic composition with a very regular structure, pore size and distribution. Here too, the yield is positively influenced. This filter significantly reduces astringency by capturing some of the suspended astringent compounds.
Both versions are available in packs of 25 with a diameter of 57 millimeters (the filter size should be the same as the inner diameter of your sieve). Click here to go to the product.
Sibarist filter paper – Conclusion
As you can see, there is Sibarist filter paper for almost every purpose. The special feature is definitely the drainage speed, which is higher than with conventional filter papers on the market. This gives every filter coffee lover the opportunity to grind their coffee finer than usual and thereby open up a new world of flavors without risking over-extraction. And we think that is definitely worth a try.
