  • About the tea

    The Makinohara plateau in the south of the Japanese main island of Honshu offers ideal conditions for this fine Sencha. The maritime climate with hot, humid summers and mild winters ensure its intense green leaves and its sweet, fresh taste with notes of citrus. Perfect for lovers of a classic Sencha.

  • Characteristics

    Leaf: Deep green, needle-shaped tea leaves.

    Infusion: Light, bright yellow-green infusion, remarkably smooth and rich.

    Aroma: Creamy sweet, fresh and grassy. Sencha has an immediate grassy note, but is also sweet. You can find aromas of fresh vegetables, such as peas and crunchy green beans. Overall, the aroma is very herbal, rich and grassy.

    Taste: Sencha has a deep green vegetable flavor, smooth and beautifully balanced, with a round umami feeling and a long lasting finish.

    The best time to harvest green tea in Japan is spring, when the tea trees emerge from dormancy and begin to bloom. Immediately after dormancy, the bushes have young leaves that are fresh, rich in nutrients and have the best flavor potential.

    Once the leaves are harvested, Japanese growers steam them over hot water for 30 to 90 seconds to stop natural oxidation and preserve the deep green color. After heating, the leaves go through two more steps before being packaged: rolling and drying.

    With Sencha, producers also remove the leaf veins to achieve a higher concentration of the green color in the final product.

Preparation recommendation

It's very important that you brew your green tea carefully if you want to get the most out of your cup. Since green tea is unfermented and therefore has the highest levels of polyphenols and tannins, using water that's too hot or steeping for too long can introduce too much bitterness into the cup.

Water: The water should have a temperature of about 70 °C.

Quantity: 6 - 7 g loose tea for 500 ml water

Steeping time: 1.5 minutes should be enough to steep the tea. You can steep the same leaves up to three times to achieve the same result.
