  • About the coffee

    This Geisha is grown in Panama in the Boquete area near the Barú volcano on the Chevas Coffee Estate. After the cherries are depulped, they are brought to LOST ORIGIN for processing. They are then inoculated with a mixed culture of thiolized yeast Lunar Crush and Pichia kluyveri. Mixed inoculations create a dynamic environment where microbes compete for sugar sources. This in turn allows for the production of richer cup profiles. Fermentation took place at 15 °C for 6 days, after which the beans were dried for 13 days until they reached the desired moisture content.

Prepare your Martin K in a hand filter:

1. Insert the filter paper and then rinse the filter and cup/pot with hot water.

2. Put 17 g of coffee into the filter (grinding level: filter grind), pour in approx. 60 ml of water in circular movements and let it brew for approx. 30 seconds.

3. Then pour 60 ml until second 40

4. Add 50 ml to minute 1:20

5. Add remaining 100 ml until minute 2:00
