About the coffee
Finca El Paraíso is located in the Piendamó region of the Cauca department in Colombia, at an altitude of approximately 1,800 to 1,900 meters above sea level. Its unique climate and fertile volcanic soils provide ideal conditions for cultivating exceptional specialty coffee. The farm has gained international recognition through its owner, Diego Samuel Bermúdez, who combines traditional coffee farming with cutting-edge scientific research.
The estate is widely regarded as a pioneer in innovative coffee processing. Through carefully controlled anaerobic fermentation, the use of selected yeasts and microorganisms, and the signature Thermal Shock process, Finca El Paraíso produces coffees with remarkable clarity, complexity, and consistency. These highly precise techniques are designed to highlight the natural characteristics of each coffee variety, creating a truly distinctive cup.
Among the varieties grown on the farm are Geisha, Pink Bourbon, Castillo, Papayo, Typica, Pacamara, and Sudan Rume. Their coffees are celebrated for vibrant notes of tropical fruit, jasmine, peach, lychee, red plum, and delicate floral aromas. Prepare your Colombia El Paraíso using a pour-over brewer:
1. Insert filter paper and then rinse the filter and cup/pot with hot water.
20 g coffee (grind size 640 microns) to 300 ml water (temperature 93 °C)
0:00 minutes: 60 ml bloom
0:40 minutes: 1st pour up to 120 ml
1:00 minute: 2nd pour up to 180 ml
1:40 minutes: 3rd pour up to 240 ml
2:20 minutes: 4th pour up to 300 ml
3:00 minutes: Brewing time ends
